After years as sous chef at a Seoul fine-dining restaurant, he moved to Tallahassee when his wife took a position at FSU. Missing the flavors of home, he started Seol Kitchen in 2023 — a marriage of his Korean roots and his wife's Tallahassee roots.
Every kimchi is fermented for 72 hours in-house. Every tortilla is pressed to order. Nothing comes from a bag.
